Sunday Brunch

A certain special person’s birthday happened to fall on Sunday this year.  Thought we’d brunch on a few of her favourite things.  As she’s a pescatarian, (vegaquarian) bacon wasn’t an option…

1 bunch baby broccolini

juice of half a lemon

sea salt

freshly ground black pepper

truffle oil

1 small pkt smoked salmon

4 eggs

freshly grated parmesan

a dash of tabasco

Steam the broccolini until just tender but still firm to the bite.  Once cooked, plunge them into iced water to refresh them.  Drain and dress with a squeeze of lemon juice, a little truffle olive oil and season with sea salt and freshly ground black pepper.

Beat 4 eggs and add 1/4 cup of water.  Grate in a little parmesan, add a dash of tabasco and season with salt and pepper.

Gently heat truffled olive oil in a medium pan.  Add the egg mixture and gently stir the oil through.  As the eggs cook at the edges, gently push them towards the middle so the uncooked mixture flows onto the pan.  Repeat this process gently until the eggs are just cooked.

Arrange as you like on a freshly toasted piece of sourdough.
